Erling is a young veteran of Chicago’s famed One Off Hospitality Group and protégé of Chef Paul Kahan. Erling founded Underscore Hospitality in 2017 with longtime colleague Joshua Tilden and partnered with One Off to open Pacific Standard Time, “a market-obsessed, hearth-driven restaurant with West Coast soul,” in 2018. He was a three-time James Beard “Best Chef: Great Lakes” finalist during his previous tenure with One Off’s Nico Osteria.

Tony Mantuano, Chef and Partner, Spiaggia, Café Spiaggia, Terzo Piano and River Roast

James Beard Award winner Tony Mantuano is an influential culinary force, a chef who has been on the ground floor of defining true Italian cuisine in the United States. In addition to his role as chef-partner at Chicago’s Michelin-starred restaurant Spiaggia, Tony is chef-partner at River Roast, situated on the Chicago River; Terzo Piano, a Mediterranean-inspired restaurant at The Modern Wing of the Art Institute of Chicago; Terralina Crafted Italian in Disney Springs, set to open this spring; and Maddon’s Post, a new concept set to open soon in the heart of Wrigleyville in partnership with Chicago Cubs Manager Joe Maddon. Tony is a recipient of the James Beard Foundation Award for Best Chef: Midwest and The Chicago Tribune’s Good Eating Award. Other projects include cookbook collaborations with wife Cathy Mantuano, a wine expert and former manager of Spiaggia.

Cathy Mantuano, Wine Consultant, Spiaggia Restaurant

Cathy Mantuano is a sought-after expert on wine and food pairings from New York to San Francisco, and a contributor to Chicago television and radio. She creates wine pairings for Chicago’s Spiaggia restaurant, owned by her husband, Chef Tony Mantuano, and she helps restaurants around the country create distinctive wine lists. Cathy got her start working in the dining room of a prestigious Milwaukee restaurant during college. There she met Tony, then a young chef, with whom she shared a remarkably similar passion for all things Italian. The two worked in several Michelin-starred restaurants in Italy, then brought their experience and passion to Chicago and Spiaggia. Cathy has operated a number of successful restaurants, taught classes on wine and wine-and-food pairing, and co-authored The Spiaggia Cookbook and Wine Bar Food with Tony Mantuano.

Dr. Robinson provides clinical leadership and strategic oversight to help ensure delivery of quality medical care to more than 8.5 million health plan members. Alia Dalal is a trained chef who shows that eating well can be fun and accessible to people of all ages and cultural backgrounds. She guest hosts the Chicago’s Best restaurant show on WGN-TV and conducts culinary programming at Chicago’s World of Whirlpool Experience Center. She worked in the Michelin-starred kitchens of Annisa (NYC) and Sepia (Chicago), and helps local producers — including Here Foods, a graduate of FamilyFarmed’s Good Food Accelerator — develop innovative products.

Melissa Graham, Founding CEO, Purple Asparagus

Sandra Holl was born and raised in the Midwest, and returned after attending culinary school, working in France and in San Francisco. In 2006, she and her husband started Floriole with a table, tent and a few pastries at Chicago’s Green City Market. By 2010, they had grown their business into a flourishing full-service cafe and bakery specializing in French-inspired pastries rooted in Midwestern ingredients. Sandra was named Chicago’s Pastry Chef of the Year at the 2016 Jean Banchet Awards.

Melissa Graham will join Chef Sandra Holl on stage for their family-friendly food presentation. Melissa is founding CEO and “Head Spear” of Purple Asparagus. The award-winning non-profit educates children, families and the community about eating that’s good for the body and the planet, through its Delicious Nutritious Adventures program taught at more than 30 Chicagoland sites.

Carolina Diaz in 2018 became first woman to win the Barilla Pasta World Championship. She joined the team at Terzo Piano at the Art Institute of Chicago in 2016 as chef di cucina under acclaimed Chef Tony Mantuano. An advocate of local sourcing, Carolina looks forward to further establishing relationships with the Midwest’s best producers. Early in her career, she joined Chef Bill Kim’s empire. She also has cooked at Filini Bar and Restaurant in Chicago’s Radisson Blu Aqua Hotel.

screening for soil samples from your urban garden, farm, or yard! You are welcome to bring as many samples as you like. In-ground soil samples (i.e., not from raised beds) preferred, but not mandatory.

This initiative is part of a two-year collaborative project between University of Illinois Champaign-Urbana,University of Illinois Extension, and Advocates for Urban Agriculture, using citizen science to develop tools to identify and manage soil lead contamination; develop a publicly available map of soil heavy metal contamination across Chicago; and identify “best bets” to avoid and mitigate soil lead, including safe crop choices and effective mitigation treatments.
